Cream of mushroom soup


  • •10 mushrooms, chopped
  • •1 medium onion, finely chopped
  • •2 cloves of garlic, finely chopped
  • •50g / 2 oz. of plain flour
  • •1 teaspoon vegetable oil
  • •425ml / ¾ pint of semi-skimmed milk
  • •575ml / 1 pint stock (1 low salt vegetable stock cube dissolved in 575ml /1 pint of hot water)
  • •Salt and pepper to taste


  • Heat the oil in a saucepan
  • Add the mushrooms, onion and garlic and fry, stirring continually for 5 minutes
  • Add the flour and stir well. Cook for another 2 minutes
  • Gradually stir in the stock and milk and bring to the boil
  • Keep stirring
  • Simmer for 20 minutes, until thickened
  • Add salt and pepper, to taste


Serve with crusty wholemeal bread

Try using a variety of mushrooms or other vegetables such as celery. For flavor try thyme, parsley or mixed herbs.
