3 tbsp cornstarch
2 tsp sugar
1 tsp salt
2 1/2 cup buttermilk
3 1/2 tbsp caraway seeds (optional)

Mix dry ingredients well (including raising, if using). Add buttermilk all at once, and stir with a wooden spoon just until a soft dough forms.

1/8 tsp cardamom
1 /4 cup butter
1 egg, at room temperature
1 3/4 cup buttermilk, at room -temperature
1 1/2 cup currants (washed and picked over)
2 tsp grated lemon zest
